Warm Potato Salad with Avocado

500g New potatoes, washed
1 Avocado
Parsley (handful, roughly chopped)
Wild Island Salad Dressing

Cook the potatoes in a pan of boiling water for approx 12 minutes until just tender.
Drain and tip in to a large bowl.
While still warm, drizzle over the wild island salad dressing.
Mix in avocado and parsley.
Leave to stand for 10 minutes or so for the flavours to develop.
Serve immediately

Just to be different – try adding chopped red onion and chives.
